halved avocado with baked egg, gilled croutons and tomato-feta cheese,bacon in Tabasco Chipotle Sauce and maple syrup

Ingredients

  • 2 whole avocadoes, not too ripe
  • 4 organic eggs
  • 1 loaf white bread such as ciabatta or baguette
  • 2 tomatoes
  • 200 g feta cheese
  • salt
  • pepper
  • olive oil
  • 4 thick slices of bacon from the butcher

For the marinade

  • 2 tbsp. maple syrup
  • 2 tsp. Tabasco Chipotle sauce

HOT TIP
If a whole avocado is not eaten within one day, simply pack it into a box with a piece of onion. This way the avocado won't become brown.

Marinate the bacon in maple syrup and Tabasco for at least 30 minutes.

Halve the avocados, remove the seed and take the fruit flesh out of the shell so that the halves remain intact. Now fill a beaten egg into each of the avocado halves. Back the filled halves in indirect heat at approx. 160 degrees and then leave to rest for around 30 minutes.

At the same time, cut the tomatoes into small pieces for the salsa, crumble the feta cheese, mix everything together and then season with salt, pepper and olive oil to taste.

Grill the bacon until crisp.

Slice the bread into relatively thin, long slices and also grill until crispy.

After the egg has set in the avocado, top with the tomato-cheese salsa and a little olive oil. Then serve together with the bacon and the croutons.
